Chef Massimo Bottura produces this exquisite balsamico in Modena from most of the locally grown Trebbiano grapes, aged for 10-20 years in small, aromatic barrels made of chestnut, oak, and juniper. Syrupy, dark, and rich, it is balanced between sweet and tart; one of the finest dressings for greens, grilled meats and vegetables, aged cheese (Parmigiano-Reggiano, Grana Padano), and fresh strawberries. The tall, thin bottle, packed in a white box, makes an elegant presentation.
