Characterized by a greenish-gold color, fresh fruit aroma, and a delicate ripe olive flavor, Frantoia proceeds to leave you with an aftertaste of sweet almonds. Rich and buttery, this unfiltered oil produced by our friends at the Barbera estate in Palermo, Sicily is the closest you can come to fresh pressed olive juice in a bottle! A customer favorite, it can handle the heat of cooking but really shines when served raw as a finisher, drizzled over robust dishes. This one has a peppery infusion.
Frantoia extra virgin olive oil consists of 30% olives of the Biancolilla variety cultivated in the mountains of Agrigento, in the towns of Lucca, Burgio and Bivona, another 30% by Cerasuola olives from the mountains of Trapani, in the towns of Buseto, San Vito and Valderice and approximately 40% by Nocellara del Belice olives grown in the mountains of the Palermo area around the towns of Bisaquino, Chiusa Sclafani and Palazzo Adriano.
The olives are harvested between October 15th and November 15th and are pressed within 12 hours from when they are harvested in mills that operate around the clock. The product is left to settle for approximately two months in silos in our warehouses at a controlled temperature of 18° Celsius. Nitrogen is used to prevent the formation of oxygen and consequent oxidation.
The result is a product with an intense and unforgettable aroma with a rounded and fragrant taste. The Frantoia style is truly unique, with an aroma and taste that come together to create an exemplary result.
